Keto Roti / Tortilla (makes 6 rotis)

Ingredients:

  • 1 cup Abbiocco Foods’ Blanched Almond Flour
  • 1/4 cup psyllium husk powder
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/4 cup hot water
  • 1 tbsp olive oil

Instructions:

  1. In a mixing bowl, combine the almond flour, psyllium husk powder, baking powder, and salt.
  2. Add the hot water and mix until a dough forms. Knead for a minute or two until the dough is smooth.
  3. Divide the dough into 6 equal parts and roll out each part into a thin roti / tortilla.
  4. Heat a non-stick pan over medium heat and cook each roti / tortilla for 1-2 minutes on each side.
  5. Serve warm with your favorite keto-friendly filling.

French Macarons (makes 12 macarons)

Ingredients:

  • 1 cup Abbiocco Foods’ Blanched Almond Flour
  • 1 cup powdered sugar
  • 2 large egg whites, aged for 2-3 days
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • Food coloring (optional)

Instructions:

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, sift together the almond flour and powdered sugar.
  3. In a separate mixing bowl, whisk the egg whites until frothy. Gradually add the granulated sugar and continue to whisk until stiff peaks form.
  4. Add the vanilla extract and food coloring (if using) to the egg whites and whisk until combined.
  5. Add the almond flour mixture to the egg whites and fold until the batter is smooth.
  6. Transfer the batter to a piping bag and pipe 1-inch circles onto the prepared baking sheet.
